Summertime in the Caribbean Means Mangos!

On Salt Cay as in the rest of the Caribbean summer is mango season.  We don't raise them on Salt Cay, but the sailing sloops bring them in from Haiti and the Dominican Republic.

There are always more than we can use!  At Porter's Island Thyme we have mango ice cream, mango cake, and mango sauces to go on our fresh local red snapper.

We are also trying something new...our own Mango Hot Sauce...the sauce is "maturing" as we speak and will be ready for sale over the next month.  When dining at Porter's Island Thyme take back a bottle of our Mango Hot Sauce so that those at home can have a taste of the Caribbean!

Salt Cay:Something New!

We have searched far and wide to find some of the best hot sauces in the world!

Not only have we worked with chefs, but with various manufacturers to come up with what we feel is the finest line of hot sauces around.

The first introduction is our:   Flaming Flamingo Hot Sauce. 

This sauce will be available at Porter's Island Thyme this summer.

The Flaming Flamingo Hot Sauces will also be available from Salt Cay Salt Works on Salt Cay in the Turks & Caicos.

Salt Cay: New Contest

The "Season" on Salt Cay is winding down and as it does we are making plans for next year.  We anticipate that it will be even better!

Most know of Porter's Island Thyme Hot Sauces...both the Mango and the Habanero.  Next season we will be introducing a new Hot Sauce and we need your help!

Provide us the the name for our new Hot Sauce and you will Win a two night stay at Castaway...Salt Cay and a complementary dinner for two at Porter's Island Thyme.
