Summertime in the Caribbean Means Mangos!

On Salt Cay as in the rest of the Caribbean summer is mango season.  We don't raise them on Salt Cay, but the sailing sloops bring them in from Haiti and the Dominican Republic.

There are always more than we can use!  At Porter's Island Thyme we have mango ice cream, mango cake, and mango sauces to go on our fresh local red snapper.

We are also trying something new...our own Mango Hot Sauce...the sauce is "maturing" as we speak and will be ready for sale over the next month.  When dining at Porter's Island Thyme take back a bottle of our Mango Hot Sauce so that those at home can have a taste of the Caribbean!
