    It would not be the Caribbean without rum!  We continue to search the world for rums that are "out of the ordinary."  We always have Cuban rum as well as seven to ten other labels.

    We have just discovered a new rum:  Ron Roguez, from Reunion Island in the Indian Ocean.  This unique rum has overtones of pineapple and vanilla and when mixed with coke it has flowery nose.

    The coconuts at Porter's Island Thyme on Salt Cay are ready to enjoy.  They contribute a valuable ingredient to several of our libations that are offered this time of year:  

    Rum & coconut water or gin & coconut water.  
    Enjoy the spirits of the season.
    Come down to the islands in the "off season" to enjoy the real Caribbean without the crowds.

    Off Salt Cay: Looking for the latest Trends!

    Everyone always asks what do you do when you are not on Salt Cay?

    We are always looking for new ideas to bring back to Salt Cay to share with you on your next visit to Salt Cay in the Turks & Caicos

    We were especially successful in New Orleans thanks to old and new friends in the restaurant and beverage businesses.
