    Everyone's Welcome on Salt Cay!

    When it is "slow season" on Salt Cay we always have lots to do.

    Lolli is back in Davao City having a baby boy. The actual delivery is expected in November. We look for her return to Salt Cay when the baby is settled with her family in the Philippines.

    JoJo has created a new Key Lime/Raspberry cheesecake that is fantastic. Appol, not to be outdone, as mastered the Tipsy Tart (a recipe from our favorite Executive Chef, Jorika, at the Bohio in Grand Turk). Please note we are still working on the "rack of lamb" and are expecting more help from Jorika when she returns from South Africa.

    JoJo has also his own version of the Island Thyme Rum Punch and Appol has improved on our Mojito.

    I have been hard at work on our new menu for the upcoming season and thanks to Ann Hawkins it should be posted on the Internet shortly. One of the best kept secrets on island is we now offer frog legs on "special nights", just ask Nettie Talbot who sampled her first frog legs last night.

    Haidee and I have finalized our advertising campaign for the upcoming season for the Bistro, the Villas of Salt Cay and Salt Cay on a whole. We can tailor-make a "package" for any budget, just give us a try.
