    Salt Cay Wine: Grape Beginnings

    What a great time!

    We bottled our first vintage of Island Thyme red wines at Grape Beginnings in Freehold, New Jersey. The wine has been maturing in oak casks for over a year and while the wine is still young it shows a lot of potential and will continue to improve with additional time in the bottle.

    Our initial offering will be a 2008 Salt Cay Zinfadel and a 2008 Chateauneuf Du Pape.

    We are in the process of negoiciating with grape growers in California, Chile and Argentina for other varietials we will be offering at Island Thyme Bistro on Salt Cay in the future.





    We want to especially thank Wendy and Simon for helping us with the initial crushing of the grapes and the racking. Not to mention putting together a fantasic crew to assist it in bottling and corking.







    The bottling came off without a hitch thanks to many watchful eyes making sure everyting was done properly and up to our critial standards.

    Then there was the cheese tasting and wine sampling. Needless to say we all decided to label the bottles at another time when our nerves are a little calmer.



    The finished products: Salt Cay Zinfadel and Chateauneuf Du Pape can be enjoyed at Porter's Island Thyme Bistro on Salt Cay in the Turks & Caicos.
