    Salt Cay Pig Roast

    The pig selection committee takes their responsibility very seriously.
    Want to have a special event that includes all the cultures who call Salt Cay home?

    How about a pig roast?  
    Island cultures consider it the ultimate event! 
    You must have a "pig sitter" to  take care of the pig prior to its departure on the Salt Cay ferry.
    Not an event to be taken lightly.  First it requires a trip to Grand Turk on the Salt Cay ferry and a visit to H.M. Prison when the selection team picks the perfect pig for the roast.  Then the pig travels to the dock with his own "pig sitter" to wait for the departure of the Salt Cay ferry.  There is the hour crossing and then the pig is transferred to North Beach where he is prepared for the roasting.

    There were the taste testers.
    While this process is going on charcoal is being made, the spit prepared and the roasting rod procured from professional roasters in Grand Turk.

    On another front the arrangements for Dwight's Salt Cay Rake & Scrape Band are being finalized and the Karaoke sound system is being fine tuned.

    There was juggling.
    The kitchen at Porter's Island Thyme is busy preparing the roasted sweet potatoes with our unique blend of island spices,  Lolli is making her famous coleslaw with fresh pineapple and the fresh corn is being made ready.  Then there is the rum cake.

    And it wouldn't be a party without Karaoke.
    Now the pig is put in the spit and slowly roasted for 3 - 3/1/2 hours while it is turned by hand.  
    Let the Party begin!
