    Salt Cay: "Off" Season

    People always ask what do you do in the "off" season on Salt Cay.  The answer is easy we prepare for the upcoming season.  We are constantly upgrading and doing maintanence at Island Thyme.
    We are updating our menu.  Haidee and I will be attending cooking classes in S.E. Asia where we hope to learn the cuisine first hand, so we can continue to focus Island Thyme's menu on the latest Caribbean fusion cuisine.

    We have put in an organic garden, so you can have the freshest produce possible when you dine at Porter's. 
    Our new "project" is aquaculture and if successful we will be adding fresh water lobster to our menu. 
    And then there are the projects the "girls" are working on.
    There is never a dull moment on Salt Cay even in the "off" season!
