    Culinary Findings: Phillipines to the Turks & Caicos



















    The search was successful!
    Island Thyme Bistro on Salt Cay will be introducing several new Asian tapas, just discovered in Davao City, to their tapas menu when the Bistro reopens in June. These include Turks & Caicos Island conch satay, tuna kinilaw, tuna carpaccio, shrimp encased in chicken & squid pasta just to name a few.

    We decided to leave balute off the menu as fertile chicken and duck eggs are difficult to find on Salt Cay in the Turks & Caicos. Find out more about the Filipino delicacy balute at: http://www.ahoyhoy.org/wordpress/index.php?p=230

    The regular menu will include JoJo's fillet of Salt Cay red snapper in a refreshing sweet & sour sauce, as well as sesame encrusted big eye tuna loin.

    New kitchen equipment is being imported to help make these new creations an easier task. We have also learned new cooking techniques to share. We will be announcing the Cooking Classes at Island Thyme Bistro over the next few months for the upcoming fall and winter season. Please keep checking our BLOGs for more information.

    Several additional potential employees were identified and you may meet them in the upcoming season. All work and no play is not the Island Thyme philosophy and to that end we are searching for a new brew and found it: Red Horse...to offer at the bar. Our Miami supplier is never happy when we return from one of these "discovery" trips and is now searching for a US source of this potent brew.
